Summer Salad with Grilled Chicken

DRESSING RECIPE

YIELDS: 6 servings

TOTAL TIME:0 hours 20 mins


INGREDIENTS:

1/4 c. olive oil

3 garlic cloves or tbsp. garlic powder

2 tbsp. red wine vinegar

1 tbsp. Dijon mustard 

Kosher salt and freshly ground black pepper

2 romaine hearts, chopped

1 cucumber, chopped

3 small radishes, chopped

1 can hearts of palm or artichoke hearts

1/4 small red onion, chopped

1 (15-ounce) can chickpeas, rinsed

1 c. fresh flat-leaf parsley leaves or basil leaves, torn

handful of green onions

1/2 c. chopped cherry tomatoes

Homemade croutons (optional- 1 piece of toast)


DIRECTIONS: Whisk together oil, vinegar, and mustard in a bowl. Season with salt and pepper. Add romaine, cucumbers, all other veggies, and toss to combine. 


*Serve with grilled chicken thighs lightly marinated or with barbeque sauce and you have a delicious, filling, and healthy dinner!
